Cabernet Sauvignon
Cabernet fruit from the Stanley Flat area of Clare (just north of the township) is hand harvested at optimal sugar and flavour ripeness. This wine is matured in both old and new French oak for about 18 months to allow the wine to soften while the final blend usually comprises a small proportion of Merlot and Cabernet Franc (about 10%) as these add complexity and depth to the wine. This wine shows generous berry fruit aromas and flavours enhanced by sensible oak treatment.
